Grandma’s Special Cottage Cheese Cake Recipe

My Dear Grandmother Lonija’s Special Cottage Cheese Cake Recipe

Ingredients

  • 300g low-fat cottage cheese
  • 180g low-fat Philadelphia cream cheese
  • 3 eggs
  • 4tbs reduced-fat sour cream
  • 4tbs semolina (you can use plain flour also)
  • 5tbs Stevia (natural sugar)
  • 1tsp vanilla extract
  • A handful of dried fruit
  • A handful of mixed nuts

Method

  1. Line the baking tray with baking paper.
  2. In a bowl mix together the cottage cheese, cream cheese, sour cream, and semolina.
  3. In a separate bowl beat the eggs and add Stevia.
  4. Add 1tsp of vanilla extract.
  5. Mix everything together.
  6. Finally, add the dried fruit and nuts to the mixture.
  7. Transfer the mixture to the oven dish and bake at 180°C for approx. 40 minutes.
