My Healthy Dessert Recipe: Chocolate and Beetroot Cake
Ingredients
- 3 cups of baking flour
- 3 cups of cooked shredded beetroot
- 4 medium-size eggs
- Mixed fruit and nuts
- ½ cup of Greek yogurt
- 150-180g of Light Chocolate Philadelphia cream cheese
- Fresh cherries
- ½ cup of cocoa powder (or chocolate protein powder)
- 1 cup of Stevia (natural substitute for sugar)
- 1/3 cup of olive oil
- 2 tsp of baking powder
- 1 tsp of baking soda
- 1 tsp of balsamic vinegar
- ½ tsp of sea salt
Method
- Preheat the oven to 180°C.
- Beat the eggs and Stevia.
- Mix all the dry and wet ingredients except the oils (olive oil and balsamic vinegar).
- Add olive oil and balsamic vinegar gradually.
- Add your fruit and nuts of choice.
- Combine it all together quickly without spending too much time mixing.
- Bake in the oven for approx. 50min.
- Once the cake is ready and cooled down, spread the chocolate cream cheese on the top and add some fresh fruit.
Tips
- First and foremost, let me just say that this cake DOES NOT taste like beetroot ok! You are simply getting the nutritional benefits of this awesome vegetable!
- This recipe is very fun – it’s really easy to do the measurements with the cup and you can go wild with the fruit and nuts you wish to add, the same goes for the cake topping.
