Carrot and Courgette Omelette Recipe
Ingredients
- 2 eggs
- 4 carrots
- 2 courgettes
- Handful of black olives (optional)
- Reduced fat mozzarella cheese
- Pinch of salt and pepper
- Olive oil
Method
- Peel and grate the carrots and courgettes.
- In a pan add 1 tbsp of olive oil and add the grated carrot and courgette mix.
- Add salt and pepper and mix well.
- Put a lid on and leave it to cook and simmer low medium heat for approx. 5 mins.
- Stir the mix well and let it cook for another 5min.
- Leave it on the side.
- Add the eggs, salt, and pepper to a bowl and whisk.
- Add the carrot and courgette mix to the eggs and mix together.
- Add another tbsp of olive oil to the pan, pour the mixture in, and spread it across the pan.
- Put the lid on and leave it to cook for approx. 10min.
- When ready, add the olives and mozzarella cheese on top, and then using a spatula flip the omelette to fold it in a half.
- Enjoy it on its own or serve it with salad.
