Healthy Chicken Meatloaf Recipe
Ingredients
- 500g chicken mince
- 4 carrots
- 2 small Romanesco cauliflower
- Fresh thyme
- Salt and pepper
Method
- Season your mince with some salt and pepper and add some fresh thyme.
- Leave the meat to rest at room temperature.
- Boil the carrots.
- Blanch the cauliflower.
- When carrots and cauliflower are cooked leave them to cool down.
- Line an oven dish with baking paper ready to cook your meatloaf in.
- Chop the carrots and cauliflower into medium size pieces.
- Add the carrots and cauliflower to your mince meat.
- Mix everything together.
- Put the mixture in the oven dish and bake at 180°C for approx. 25 mins.
- Serve hot or cold with some salad and mash (sweet potato, butternut squash, and celeriac mash are excellent healthy mash options) or use as a sandwich filling for lunch.
Tips
- You can use turkey mince instead of chicken mince, also you can add some diced turkey bacon to your mince.
- You can put vegetables of your choice in your meatloaf. I often make a Mediterranean-style meatloaf.
- Likewise, you can use herbs and spices of your choice. I often use oregano.
- This meatloaf freezes well making it great for batch cooking.
